Everyday Encounters: A Michelin-starred chef balances work with cycling

Chef Roland Passot has worked in countless restaurants, including running Michelin-starred La Folie in San Francisco from 1988 to 2020 and opening Petite Left Bank on Tiburon Boulevard in 2022, a sister restaurant to his Left Bank restaurants in Larkspur, San Jose and Menlo Park.

 

He says the core of his work comes down to one thing.

 

“The most important part is your customers — taking care of them, having them coming back over and over again, year after year and week after week,” he says.

 

The 70-year-old semi-retired chef and restaurateur, born in Villefranche-sur-Saône, France, sat in Fountain Plaza on March 25, taking a break from his bike ride through Belvedere. After decades of success cooking — and eating — Passot says exercise has helped balance out his calories. Following a knee surgery, he embraced the road bike, logging more than 20,000 miles, sometimes riding as far as Petaluma from his Mill Valley home.
